Pesto Chicken Sandwich


Pesto Chicken Sandwich

This is a Amazing yummy sandwich!

Makes about Four Sandwiches

Two large sized Chicken Breasts
1/2 t Garlic power
1 t Salt
1/2 t Pepper
2 Bell Peppers (your choice red, yellow,orange, green)
1 Onion med size
Olive oil
1 large Tomato or 2 med
Cheese ( again your choice I like mozzarella)
Pesto (Homemade is the best but I also like the one from Costco)
Four Ciabatta bread

First you cut the chicken length ways inhalf. In a pan heat about 1 1/2 Tablespoon Olive oil.
Cook chicken on med heat.  In a bowl mix Salt, Pepper and  Garlic power.  Lightly sprinkle on chicken and after about 5 min flip chicken and sprinkle on that side with seasoning. Continue cooking till completely done. Cut up the Peppers and Onions in slices saute with oil and when half way done add some of the seasoning.
Slice Tomatoes. Cut bread in half and put a little butter on both sides and then toast face down on a pan on med/high heat or put in oven on broil till lightly toasted. Then spread Pesto on both sides of bread then add chicken (if you don't want the chicken whole then shredded) Add the saute Peppers the a slice of cheese. On the other side of bread add sliced Tomatoes. Put in the Oven ether on low broil for about 3-5min or 10min at 400 temp. Take out of oven and put together and cut in half. Enjoy!
