Home Cooking

When I was in Washington I did one of my favorite things, cooking with my momma. We have such a great time cooking together. When I was younger my mom tried teaching me how to cook and tried to get me interested in all things domestic but I wouldn't have any of it. I hated the idea of cooking and cleaning and keeping house. As I grew up though I realized there was much more to it then just keeping house. There was an art to it. When I went to college the freshman 15lb was a real thing and I put it on quick! The food I ate wasn't the type that if grown up on, there wasn't a lot of green, most of it was pre-packaged or deep fried. My skin was a mess, my clothes didnt fit and my body wasn't my friend anymore. So I did that which I never wanted to do, I learned how to cook. I instantly regretted all the times I brushed off my moms offers to teach me or found excuses to avoid going into the kitchen. I was on my own, I started making little things, scrambled eggs, pancakes, pastas and salads. Then I began experimenting with other things like mixing grilled chicken with avocado, tomato and cilantro. I began small and within a year I was baking and cooking with the best of them! I turned my friends into guinea pigs and luckily they loved it! I learned not only how to cook but the joy that cooking brought. I was able to serve others through it, relieve stress through it, express love through it, and to feel a sense of pride through it. I finally realized why my mom loved it so much. It became my favorite past time. When I couldn't cook I missed it, when I could I wanted to share it. More than cooking my love of the sweet things in life grew and dessert became my specialty. I have a huge sweet tooth and finding ways to make my dessert delicious and healthy became my mission. I still indulge as everyone should but I think everything you eat should be good for you, even if it's covered in chocolate :). Here's a bit of what we made while I was visiting Washington. 
Mrs K's cookies:
Ingredients:
•2 cups brown sugar or 1 1/2 honey 
•1 cup butter or 1/2 cup + 1/2 cup apple sauce
•1/4 cup water or milk of choice 
•2 eggs 
•2tsp vanilla 
Cream together in mixer then add;
•3 cups whole wheat flour
•3 cups oatmeal
•1tsp cinnamon 
•1tsp baking soda
•1tsp salt 
•3tbsp cocoa powder 
Combine with wet ingredients until just mixed. 
Add any or all of the following; 
•2 cups chocolate, Carob or butterscotch chips 
•2 cups raisins 
•1 cup chopped nuts 
• 1/2 cup shredded coconut 
Drop into greased cookie sheet and bake at 325° for 10-12min (golden around edges). Let cool for 2-3min before removing from sheet and enjoy!

Green Breakfast Basket: 
Ingredients:
•1 cup Pork sausage 
•1/2 cup onions (diced) 
•1 tsp garlic (minced) 
Sauté all together in a skillet until meet is browned and onions are translucent. Add in a few handfuls of kale (washed with stems removed) and pour in 1/4cup water. Top with eggs and cover until eggs are as desired. Sprinkle with seasoning salt, pepper, turmeric and paprika to taste. Enjoy!

You are right about cooking and the art of it. We all have to eat, so why not eat delicious, healthy food that is made with love....most of the time.
