For Christmas my girls got a macaroon baking tray, and have been bugging me about making them for the last few weeks. This last Saturday we had an unusual empty afternoon and decided it was now or never. Now I'm not the biggest fan of them, they seem like too much work for such a little cookie, but the girls fell in love with them over the years of friend's birthday parties and how they can be any color and flavor!

This recipe is a small batch. But perfect for our first time, and like most good things it takes patience and practice!
We used lemon juice and 2 drops lemon oil, and made a light buttercream frosting for the filing.
Her timing said to bake for 9 minutes but we did it for 11. They weren't cooked all the way at 9 minutes.

Our ingredients and tools needed.
Miss E using the immersion blender to whisk the egg white.
perfect peaks, and then she added the sugar and Cream of Tartar.
Folding in the whipped egg/sugar mixture with the flour mixture.
We used a quart sized ziploc bag, and just cut a corner.
The directions said to fill the tray and then tap the pan on the counter to remove any bubbles and to help flatten the batter. Then we let them sit for the full 30 minutes to set up before baking.
The finished cookies, they were good. We did add too much filling so they were quite sweet! But we will definitely make them again, the girls are determined to master the Macaroon!
