Breakfast Time

So I am a firm believer in that breakfast is the most important meal...okay I personally think they all are but I don't function without breakfast! Here are some of my go to recipes!

Southwest Eggs
Serves 1
  • 2 Egg Whites
  • 1 Whole Egg
  • 1/2 Avocado
  • 2Tbsp Chunky Salsa
  • Salt and Pepper
In a bowl beat together eggs, egg whites, salt and pepper. In a non-stick pan over Med heat cook eggs until desired texture. Remove from heat. Chop up avocado into small cubed chucks and add to eggs. Transfer to a plate and top with salsa.

Pumped up Apple Oatmeal
Serves 1
  • 1/2 C Oatmeal
  • 1 Cup Water
  • 1tsp Ground Flax Meal
  • 1/2 Apple (chopped)
  • 2tps Brown Sugar
  • Sprinkle of cinnamon
Place all ingredients in a microwave safe bowl and heat on high for 1 minute. Stir contents with a spoon and return to microwave for an additional 2 min. Caution this will be hot. Feel free to add your favorite milk on top or just leave it as like me is for a hearty breakfast.



Banana and Cream Cheese Stuff French Toast

Serves: 1
  • 2 slices whole wheat or multi-grain bread
  • ½ a banana
  • 1-2 tablespoons low-fat cream cheese
  • 1 tablespoon toasted almonds, chopped (optional)
  • ½ tablespoon honey
  • Cinnamon (Optional: Nutmeg)
  • 1 large organic egg
  • 2 tablespoons 1% milk
  • 1 teaspoon vanilla extract
  • Cooking spray
Spread ½-1 tbsp of cream cheese on each slice of bread. Slice the banana lengthwise into 4-5 thin strips and layer banana over the cream cheese. On the other slice of bread, sprinkle toasted almonds, nutmeg, cinnamon, and honey. Place one piece of bread over the other making a sandwich. Whisk egg, milk and vanilla in a shallow dish. Place the sandwich in egg mixture; flipping over to make sure each side is coated in egg. Sauté on low to medium heat in a nonstick skillet coated with cooking spray until golden brown. Top with blueberries and powdered sugar.
